Grilled Caribbean Chicken

Marinate chicken in a tangy, tropical blend of mango, ginger, lime, and orange juice before grilling.
Ingredients:
  • 3 skinless, boneless chicken breasts
  • 0.25 cup orange juice
  • 2 tablespoons fresh lime juice
  • 2 tablespoons mango chutney
  • 2 teaspoons grated fresh ginger
  • 1 tablespoon olive oil
  • 0.5 teaspoon hot pepper sauce
  • 1 teaspoon minced fresh oregano
Instructions:
  • Combine orange juice, lime juice, chutney, ginger, oil, pepper sauce, oregano, and cloves in a glass dish. Mix well, add chicken, toss to coat. Cover and refrigerate overnight to marinate.
  • Preheat the grill to medium high heat or set the oven to broil.
  • Take the chicken out of the dish, discard the leftover marinade, and grill or broil the chicken 6 inches from the heat source.
