Spicy grilled chicken with mild heat, served with brown rice and zesty zucchini. Opt for free-range chicken for best flavor.
Ingredients:
  • 1 cup rum
  • 5 tablespoons light soy sauce
  • 0.25 cup lime juice
  • 0.25 cup brown sugar
  • 12 cloves garlic, minced
  • 2.5 tablespoons finely minced fresh ginger root
  • 2 teaspoons dried thyme
  • 1 teaspoon ground white pepper
  • 7 drops hot pepper sauce (e.g. Tabasco™) to taste
  • 1 serrano pepper, finely chopped
  • 4 pounds skinless, boneless chicken breast halves
Instructions:
  • Combine rum, soy sauce, lime juice, brown sugar, garlic, ginger, thyme, salt, pepper, hot pepper sauce, and serrano pepper in a bowl. Pierce chicken on all sides with a fork. Place chicken in a shallow container, pour in the marinade, and cover. Refrigerate for at least 8 hours or overnight to marinate.
  • Heat the grill on high.
  • Prepare the grill grate by giving it a light coating of oil. Dispose of the marinade and transfer the chicken to the grill. Grill for 8 minutes on each side, or until the juices run clear.
