Spice up your celebration with tangy Caribbean grilled wings marinated in zesty citrus, aromatic spices, thyme, and fiery habanero.
Ingredients:
  • 0.25 cup fresh squeezed orange juice
  • 2 tablespoons lemon juice
  • 2 tablespoons lime juice
  • 2 teaspoons ground black pepper
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped garlic
  • 1 tablespoon chopped fresh ginger
  • 1 habanero pepper, seeded and chopped (use gloves)
  • 1 tablespoon curry powder
  • 0.5 teaspoon ground allspice
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground cinnamon
  • 0.5 cup vegetable oil
  • 12 large chicken wings, tips removed and wings cut apart at joint
Instructions:
  • Combine orange juice, lemon juice, lime juice, salt, black pepper, thyme, garlic, ginger, habanero pepper, curry powder, allspice, nutmeg, and cinnamon in a bowl. Whisk in vegetable oil. Transfer 3/4 of the marinade to a resealable bag, add chicken wing pieces, remove air, and refrigerate for 4 to 12 hours. Store the remaining 1/4 of the marinade in a separate bowl in the fridge until ready to grill.
  • Get your outdoor grill ready by preheating it to medium heat and giving the grate a light coating of oil.
  • Take the wing pieces out of the marinade bag, and dispose of the marinade. Season the wings with salt and pepper, then grill on the hottest part until they are nicely browned, flipping once, approximately 4 minutes per side.
  • Move wings to a cooler section of the grill and brush with remaining marinade. Close the grill and cook until wings are golden brown, have grill marks, and are cooked through, about 10-15 minutes. Baste wings again and flip after 5-8 minutes.
