Easy jerk chicken made with chicken thighs, bursting with bold flavors. Pair with black beans and rice for a complete meal.
Ingredients:
  • 2 pounds boneless, skinless chicken thighs
  • 3 green onions, roughly chopped
  • 2 habanero peppers, stemmed
  • 1 clove garlic
  • 3 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon dark brown sugar
  • 1 teaspoon allspice
  • 0.5 teaspoon nutmeg
  • 0.5 teaspoon thyme
Instructions:
  • Add chicken to a large resealable plastic bag. Blend green onions, habanero peppers, garlic, lime juice, soy sauce, brown sugar, allspice, nutmeg, and thyme in a food processor until smooth. Pour mixture over chicken in the bag, seal, and refrigerate for 2 hours.
  • Prepare your outdoor grill by preheating it to medium-high heat and gently oiling the grate.
  • Take the chicken out of the bag and discard the marinade. Grill the chicken for about 16 minutes, turning halfway through, until no longer pink in the center and the juices run clear. Ensure the internal temperature reaches at least 165°F (74°C) using an instant-read thermometer.
