Flavorful grilled jerk chicken with a citrusy twist, marinated in jerk seasoning, citrus juices, and spices.
Ingredients:
  • 0.25 cup jerk seasoning, divided
  • 2 tablespoons grapeseed oil
  • 1 small lemon, juiced
  • 1 small lime, juiced
  • 1 small orange, juiced
  • 1.5 pounds boneless, skinless chicken breasts
Instructions:
  • In a resealable plastic bag, mix 3 tablespoons of jerk seasoning with oil, lemon juice, lime juice, and orange juice.
  • Lay the chicken flat on a work surface and carefully slice horizontally through the middle, ensuring not to cut all the way through. Open the chicken like a book to create two equal sides.
  • Coat butterflied chicken breasts with the remaining 1 tablespoon of jerk seasoning and place them in the marinade. Chill in the fridge for approximately 1 hour. Take out of the refrigerator 10 minutes before grilling.
  • Preheat the gas grill to 500 degrees F (260 degrees C, lightly oil the grate, and grill the chicken until cooked through, about 4 to 5 minutes per side. Serve hot.
