Jerk Chicken Tacos

Flavorful jerk chicken tacos with grilled pineapple, juicy chicken thighs, and fresh veggies - a quick and tasty summer meal!
Ingredients:
  • 0.5 cup mayonnaise
  • 2 tablespoons jerk seasoning, divided
  • 2 tablespoons lime juice, divided
  • 1 tablespoon olive oil
  • 1.5 pounds boneless, skinless chicken thighs
  • 1 (20 ounce) can pineapple rings, drained
  • 8 (6 inch) flour tortillas
  • 1 cup shredded cabbage
  • 0.5 small red onion, minced
  • 0.5 cup chopped fresh cilantro
Instructions:
  • Combine mayonnaise, 1 tablespoon jerk seasoning, and 1 tablespoon lime juice in a small bowl, whisk until well mixed.
  • Combine olive oil, the rest of the jerk seasoning, and the remaining lime juice in a separate bowl. Mix in chicken until well coated.
  • Get your outdoor grill ready by preheating it to a medium-high temperature and giving the grate a light coating of oil.
  • Place pineapple slices on the top rack of the grill and chicken directly on the grill. Grill for 6 minutes. Flip both pineapple and chicken and continue grilling until chicken is cooked through, approximately 6 minutes more. Check the chicken's temperature with an instant-read thermometer to ensure it reaches at least 165°F (74°C). Transfer to a cutting board and rest for 5 minutes before serving.
  • Thinly slice the chicken and evenly distribute it among the tortillas. Chop the pineapple and also evenly distribute it among the tortillas.
  • Layer shredded cabbage, onion, and cilantro on top of each taco. Finish by drizzling each with the reserved sauce before serving immediately.
