Jerk Chicken Alfredo

Succulent jerk chicken marinated in homemade spices, pan-seared, and paired with creamy Alfredo pasta for a taste of the Caribbean.
Ingredients:
  • 4 large green onions, white parts and some tender green tops, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 lime, zested
  • 1 teaspoon green chile pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1 splash lime juice
  • 0.5 teaspoon whole allspice berries
  • 0.5 teaspoon whole black peppercorns
  • 0.5 teaspoon yellow mustard
  • 0.5 teaspoon ground thyme
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground coriander
  • 0.125 teaspoon dried rosemary
  • 0.125 teaspoon ground nutmeg
  • 1 pound boneless, skinless chicken thighs, cubed
  • 16 ounces penne pasta
  • 0.5 cup butter
  • milk
  • 1.5 cups finely shredded Parmesan cheese
  • 2 cloves garlic, minced
Instructions:
  • In a food processor, blend green onions, garlic, vegetable oil, brown sugar, soy sauce, lemon zest, pepper flakes, salt, basil, lime juice, allspice berries, peppercorns, mustard, thyme, ginger, coriander, rosemary, and nutmeg into a smooth paste. Transfer the jerk marinade to a large resealable plastic bag, add chicken, and mix thoroughly. Seal the bag and marinate at room temperature for 30 minutes, flipping the chicken occasionally.
  • 1. Boil a large pot of lightly salted water. 2. Cook penne in the boiling water, stirring occasionally, until al dente, about 12 minutes. 3. Drain the pasta.
  • Gently melt butter in a saucepan. Pour in milk and bring to a simmer. Cook for 5 minutes. Add Parmesan cheese and garlic, whisking constantly until the cheese is fully melted and the sauce is well mixed. Set aside.
  • Sear chicken in a large nonstick skillet until cooked through, about 7 to 8 minutes. Add cooked chicken to the Alfredo sauce in a saucepan and simmer for 3 to 5 minutes. Stir in jerk seasoning, keeping the sauce smooth. Serve over pasta.
