Delicious jerk chicken soft tacos with flavorful grilled chicken breasts, perfect for summer gatherings.
Ingredients:
  • 2 (5 ounce) skinless, boneless chicken breasts
  • 2 tablespoons jerk paste
  • 2 tablespoons jerk seasoning, divided
  • 0.25 cup chicken broth, or more as needed
  • 4 (6 inch) flour tortillas
Instructions:
  • Place chicken breasts in a resealable bag and coat with jerk paste and 1 tablespoon jerk dry seasoning. Refrigerate for 1 hour while you prepare the charcoal grill.
  • Preheat a charcoal grill to high heat while the chicken marinates.
  • Grill the chicken on the indirect heat side with the lid closed. Check every 5 to 7 minutes until the chicken is cooked through, reaching an internal temperature of at least 165°F (74°C) with an instant-read thermometer.
  • Allow the dish to cool for 5 to 10 minutes until it is safe to handle, then slice into bite-sized pieces.
  • In a saucepan, pour in the chicken broth. Add in the diced chicken and the rest of the jerk dry seasoning. Stir thoroughly, then simmer covered on low heat for 10 to 15 minutes. Adjust by adding more broth gradually if necessary.
  • Once cooked, transfer the flavorful chicken to warm tortillas with your favorite toppings for a delicious meal.
