Jerk chicken and slaw recipe

Savor tender jerk chicken thighs paired with crisp coleslaw for a delightful and effortless meal.
Ingredients:
  • 1 pkt Chicken Thighs with Jamaican Jerk
  • 350g pkt Special Burger Slaw Kit
  • 1 avocado, stoned, peeled, sliced
  • 3 limes
  • Coriander sprigs, to serve
Instructions:
  • Preheat the barbecue grill or chargrill to medium heat. Coat the chicken with olive oil spray and grill for 4 minutes on each side until beautifully golden and fully cooked. Place the chicken on a plate, cover it with foil, and let it rest for 5 minutes before serving.
  • Combine the salad kit in a large bowl following packet directions, save the dressing. Add the avocado on top and drizzle with half of the reserved dressing.
  • Cut one lime in half, squeeze the juice over the salad, then cut the other half into wedges or cheeks.
  • Plate the chicken and salad, then generously drizzle with the remaining dressing and sprinkle with fresh coriander. Season to taste and serve alongside lime wedges for a burst of citrus flavor.
