Jerk Chicken Stir-Fry

Zesty chicken and vegetable stir-fry served over rice, ready in just 30 minutes - a quick and flavorful dinner option.
Ingredients:
  • 1 pound boneless, skinless chicken breast halves, cut into 1/2-inch strips
  • 2 teaspoons jerk seasoning (dry)
  • 1 tablespoon vegetable oil
  • 4 medium green onions, cut into 1/2-inch pieces
  • 1 medium red bell pepper, cut into 1-inch pieces
  • 1 can (11 ounces) mandarin orange segments, drained
  • 1/2 cup honey-roasted peanuts
  • 4 cups hot cooked rice
Instructions:
  • Add the chicken to a sturdy resealable plastic bag. Sprinkle the jerk seasoning over the chicken, then seal the bag and shake well until the chicken is evenly coated.
  • In a 10-inch skillet over medium-high heat, warm the oil. Cook the chicken until no longer pink in the center, about 10 to 12 minutes. Add onions and bell pepper, stir-fry for 2 to 3 minutes until vegetables are crisp-tender.
  • Fold in juicy orange segments with care. Top generously with crunchy peanuts. Serve on a bed of fluffy rice.
