Caribbean-inspired chicken stir-fry with jerk seasoning and plum sauce for a sweet and spicy kick. Irresistibly delicious!
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 green bell pepper, seeded and cubed
  • 1 red bell pepper, seeded and cubed
  • 0.25 cup sliced sweet onions
  • 0.75 pound skinless, boneless chicken breast, cut into strips
  • 2.5 teaspoons Caribbean jerk seasoning
  • 0.5 cup plum sauce
  • 1 tablespoon soy sauce
  • 0.25 cup chopped roasted peanuts
Instructions:
  • In a large skillet on medium-high heat, sauté bell pepper and onion in oil until slightly tender, about 5 to 7 minutes. Transfer to a plate and set aside.
  • Season the chicken with aromatic jerk seasoning and cook in the skillet until it is perfectly cooked through and no longer pink, stirring occasionally.
  • Add the bell peppers and onions back to the skillet and pour in the plum sauce, then toss everything together. Cook for 3 to 5 minutes until the peppers and onions are heated through. When ready to serve, sprinkle with soy sauce and chopped peanuts.
