Tender chicken bursting with bold Caribbean jerk spices.
Ingredients:
  • 3 tablespoons Caribbean jerk seasoning
  • 3 pounds boneless skinless chicken thighs
  • 1 large red or green bell pepper, chopped (1 1/2 cups)
  • 1 large onion, chopped (1 cup)
  • 1/2 cup Progresso™ chicken broth (from 32-oz carton)
  • 1/4 cup ketchup
  • 8 hoagie buns (7 to 8 inches), split
Instructions:
  • Massage the jerk seasoning liberally onto the chicken. Scatter bell pepper and onion at the base of a 3 1/2- to 4-quart slow cooker. Nestle the seasoned chicken on top of the vegetables. Combine broth and ketchup in a small bowl, then pour over the chicken.
  • Slow cook on low heat for 6 to 8 hours with a lid on.
  • Remove the chicken from the cooker and shred it with two forks on a cutting board. Return the shredded chicken to the cooker, mix well, and then fill buns with the chicken mixture using a slotted spoon.
