Caribbean Jerk Chicken & Pasta Salad

Award-Winning Pineapple, Ginger, and Lime Salad explodes with tropical flavors!
Ingredients:
  • 1 box Betty Crocker™ Suddenly Salad® chipotle ranch pasta salad mix
  • 1/3 cup mayonnaise
  • 1 tablespoon packed brown sugar
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated gingerroot
  • 1/2 teaspoon crushed red pepper flakes
  • 2 packages (6 oz each) refrigerated grilled chicken strips, chopped
  • 1 1/2 cups chopped fresh pineapple
  • 3 medium green onions, sliced
  • 2 teaspoons chopped fresh cilantro
Instructions:
  • Add the Pasta mix to a 3-quart saucepan filled two-thirds full with boiling water. Simmer gently for 15 minutes without a lid, stirring occasionally.
  • In a big bowl, combine seasoning mix, mayonnaise, brown sugar, lime juice, ginger, and red pepper flakes. Add chicken, pineapple, green onions, and cilantro.
  • After draining the pasta, rinse it with cold water and shake well to remove excess moisture. Gently stir the pasta into the salad mixture. Chill the salad in the refrigerator for 1 hour. Before serving, give it a final stir to combine all the flavors.
