Slow-Cooker Cajun Beef Stew

Slow-cooked Caribbean jerk beef stew with flavorful veggies and Gold Medal® flour for a Cajun-style dinner.
Ingredients:
  • 1/4 cup Caribbean jerk marinade
  • 1 1/2 lb beef stew meat
  • 4 medium red potatoes (about 3/4 lb), cut into quarters
  • 1/3 cup Gold Medal™ all-purpose flour
  • 1 tablespoon spicy Cajun seasoning
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 3 cups frozen bell pepper and onion stir-fry (from 1-lb bag)
Instructions:
  • Cover the beef with the flavorful marinade in a resealable plastic bag or a dish. Allow the beef to marinate for 15 minutes to enhance the taste.
  • Prepare the slow cooker by coating it with cooking spray. Arrange the potatoes in the slow cooker. Combine flour and Cajun seasoning, then mix with the beef and marinade until well coated. Layer the beef and marinade over the potatoes, and then add the tomatoes.
  • Cover and simmer on a gentle Low heat for 7 to 8 hours.
  • Add the stir-fry vegetables and cook covered on low heat for 15 to 30 minutes until the vegetables are tender.
