Savor an effortless Cajun-style beef and veggie feast.
Ingredients:
  • 1 Reynolds® Slow Cooker Liner
  • 1 boneless beef chuck roast (2 to 2 1/2 lb)
  • 3 teaspoons Cajun seasoning
  • 1 box (9 oz) frozen corn, thawed
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1/8 teaspoon pepper
  • 1/2 teaspoon red pepper sauce
Instructions:
  • Fit the Slow Cooker Liner snugly into a 5- to 6 1/2-quart slow cooker, ensuring it covers the bottom and sides, and pull the top over the rim of the bowl.
  • Generously coat the beef with Cajun seasoning before placing it in the slow cooker. Add corn, onion, and bell pepper on top.
  • Combine the tomatoes, pepper, and pepper sauce in a small bowl, then drizzle the mixture over the vegetables and beef.
  • Cover and simmer over low heat for 8 to 10 hours.
  • Transfer the tender beef from the slow cooker onto a cutting board and slice it thinly. Use a slotted spoon to scoop out the corn mixture and serve it alongside the delicious beef.
