Transport your taste buds to the tropics with this easy backyard grilled meal.
Ingredients:
  • 2 cups uncooked instant rice
  • 1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
  • 1 small red bell pepper, chopped (1/2 cup)
  • 2 medium green onions, sliced (2 tablespoons)
  • 4 salmon fillets (6 oz each), skin removed
  • 1 teaspoon salt
  • 1/2 cup chutney
  • 1 cup pineapple chunks
Instructions:
  • Preheat grill. Cut four 18x12-inch pieces of heavy-duty foil and coat each with cooking spray.
  • Combine rice and broth in a large bowl and let it sit for about 7 minutes until the broth is almost absorbed. Add bell pepper and onions, then spoon 3/4 cup of the rice mixture onto each piece of sprayed foil. Place a salmon fillet on top of the rice, season each fillet with 1/4 teaspoon salt, and then add 2 tablespoons of chutney and 1/4 cup of pineapple chunks.
  • Wrap the foil tightly around the salmon and rice mixture, leaving room for air to circulate and expand.
  • Grill the foil packets over medium heat for 12 to 18 minutes, turning them halfway through, until the salmon flakes easily with a fork. Serve the packets on plates and carefully cut an X across the top of each packet, then fold back the foil to reveal the delicious contents.
