Create a flavorful tropical meal with spicy Cajun salmon and pineapple salad.
Ingredients:
  • 18.20 gm olive oil
  • 2.50 gm Brand ground cumin
  • 1 tsp ground coriander
  • 2.50 gm sweet paprika
  • 1 tsp ground fennel
  • 4 x 150g salmon fillets
  • 1/2 ripe pineapple, peeled, cored, thinly sliced
  • 2 Lebanese cucumbers, thinly sliced lengthways
  • 1 long red chilli, seeded, thinly sliced
  • 125.00 ml coriander leaves
  • 21.00 gm lime juice
Instructions:
  • In a bowl, mix together the oil, cumin, coriander, paprika, and fennel. Season with salt and pepper, then add the salmon and coat it evenly with the spice mixture.
  • Preheat a frying pan over medium-high heat. Sear the salmon for 3 minutes on each side for medium doneness or until cooked to your preference. Remove to a plate and let it rest for 5 minutes before serving.
  • Combine juicy pineapple, crisp cucumber, spicy chilli, fresh coriander, and tangy lime juice in a bowl. Separate into serving plates and pair with succulent salmon for a delightful presentation.
