BBQ cajun salmon with mango salsa

Succulent cajun-spiced salmon paired with vibrant mango and avocado salsa for a protein-packed and fiber-rich meal.
Ingredients:
  • 18.20 gm olive oil
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 2.50 gm ground paprika
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 4 (about 120g each) skinless salmon fillets
  • Baby rocket leaves, to serve
  • Thinly shaved fennel, to serve
  • 1 mango, stoned, peeled, finely chopped
  • 1 avocado, stoned, peeled, finely chopped
  • 1 Lebanese cucumber, seeded, finely chopped
  • 1/2 red onion, finely chopped
  • 1 long red chilli, seeded, finely chopped (optional)
  • 125.00 ml coarsely chopped coriander
  • 42.00 gm lime juice
Instructions:
  • In a medium bowl, mix together oil, cumin, coriander, paprika, onion powder, and oregano. Add the salmon and coat it evenly. Season with salt and pepper to taste.
  • Preheat a barbecue grill or chargrill to medium-high. Grill salmon for 2-3 minutes on each side or until done to your preference. Place on a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Prepare the vibrant mango & avocado salsa by mixing mango, avocado, cucumber, onion, optional chili, fresh coriander, and a splash of zesty lime juice in a bowl.
  • Assemble rocket leaves and fennel on plates, then layer with salmon and mango & avocado salsa. Enjoy fresh.
