Summer favorite: Spicy salmon with corn salsa for a healthy meal.
Ingredients:
  • 20.00 ml dried thyme
  • 20.00 ml dried oregano
  • 2.50 gm ground cumin
  • 20.00 ml ground coriander
  • 20.00 ml ground dried garlic
  • 40.00 ml pimenton (sweet smoked paprika)
  • 6 x 120g skinless salmon fillets
  • 72.80 gm olive oil
  • Guacamole, to serve
  • Lime wedges, to serve
  • Cooked kernels from 2 fresh corn cobs
  • 1 red capsicum, roasted, peeled, diced
  • 1 small red chilli, seeded, finely chopped
  • 3 spring onions, thinly sliced
  • 31.50 gm lime juice
  • 62.50 ml chopped coriander leaves
Instructions:
  • Heat 2 teaspoons of oil in a non-stick pan over high heat. Pan-fry corn until just golden. Mix in the remaining ingredients and season to taste.
  • - Preheat the oven to 180°C. - Combine herbs and spices with 1 tablespoon ground white pepper and 2 tablespoons salt. - Brush the salmon with 1 tablespoon oil and coat it in the spice mixture. - Heat the remaining oil in an ovenproof frypan over medium heat. - Sear the fish for 2 minutes on one side, then 1 minute on the other side. - Transfer the frypan to the oven and bake for 3-5 minutes until cooked. - Serve with salsa, guacamole, and lime.
