Chargrilled salmon with avocado salsa

Create a quick and healthy family meal with just 4 simple ingredients.
Ingredients:
  • 4 (about 150g each) skinless salmon fillets
  • 2 bunches asparagus, woody ends trimmed
  • 1/2 avocado, stone removed, peeled, finely chopped
  • 2 tomatoes, halved, deseeded, finely chopped
Instructions:
  • Start by heating a barbecue grill and flat plate over medium-high heat. Next, generously brush the oil over the salmon and asparagus. Make sure to season both sides of the salmon with salt and pepper.
  • Turn the heat down to medium. Grill the salmon for 4 minutes on each side or until it easily flakes with a fork. Plate the salmon.
  • Cook asparagus on a flat plate, turning occasionally, for 2-3 minutes until vibrant green and tender-crisp. Transfer to a serving plate.
  • In a bowl, gently mix together the ripe avocado and juicy tomato. Season with a sprinkle of salt and a dash of pepper. Arrange the cooked asparagus on individual serving plates. Pile the succulent salmon on top of the asparagus, then generously spoon the flavorful avocado salsa over the fish. Enjoy!
