Succulent broiled salmon steaks crowned with vibrant mango-tomato salsa.
Ingredients:
  • 4 (6 ounce) salmon steaks
  • 3 tablespoons olive oil
  • 1 large red onion, diced
  • 2 cloves garlic, peeled and minced
  • 2 tomatoes, diced
  • 1 sprig fresh cilantro, chopped
  • 2 mangos - peeled, seeded, and diced
Instructions:
  • Preheat the broiler in the oven and line a broiler pan with foil.
  • Place the salmon steaks on the prepared pan and broil for 12 minutes, or until flaky with a fork.
  • In a medium saucepan over medium heat, saute onion in olive oil until tender. Add garlic, tomatoes, and cilantro. Cook for 1 to 2 minutes until heated through, then remove from heat. Mix in the mangos and serve over the salmon steaks.
