Grilled Ginger-Teriyaki Salmon with Honey-Mango Salsa

Grilled teriyaki salmon with mango salsa - a summer must-have for any BBQ gathering!
Ingredients:
  • 1 teaspoon grated lime peel
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • Dash red pepper sauce
  • 1 medium mango, peeled, seed removed and diced
  • 2 tablespoons finely chopped red onion
  • 3 tablespoons teriyaki baste and glaze (from 12-oz bottle)
  • 1 tablespoon grated gingerroot
  • 1 lb salmon fillets
Instructions:
  • Combine lime peel, lime juice, honey, and pepper sauce in a small glass or plastic bowl. Add mango and onion, toss well. Cover and refrigerate for 1 hour.
  • Combine teriyaki glaze and fresh ginger in a shallow glass or plastic dish. Place the salmon in the dish, skin side up, and marinate for 15 minutes.
  • Preheat your gas or charcoal grill. Gently brush the grill rack with vegetable oil.
  • Preheat the grill to medium heat and grill the salmon, starting skin side up. Grill covered for 2 minutes, then flip the salmon and grill covered for an additional 5 to 10 minutes, or until the salmon easily flakes with a fork. Serve with salsa.
