Elevate kids' meals with grilled lamb cutlets in irresistible peanut marinade.
Ingredients:
  • 8 lamb cutlets, trimmed
  • 62.50 ml teriyaki sauce
  • 9.20 gm peanut oil
  • 1/2 onion, chopped
  • 1 garlic clove, crushed
  • 1/2 tsp finely grated ginger
  • 1 tsp ground coriander
  • Pinch chilli powder (optional)
  • 2 tsp teriyaki sauce, extra
  • 130.00 gm crunchy peanut butter
  • 250.00 gm water
  • Carrot sticks, to serve
  • Celery sticks, to serve
  • Blanched green beans, to serve
Instructions:
  • In a large non-metallic bowl, combine the lamb with teriyaki sauce. Mix well to ensure the lamb is coated, then cover and refrigerate for 20 minutes.
  • Heat oil in a small saucepan over medium heat. Sauté onion until softened and light golden, about 3-4 minutes. Add garlic, ginger, cumin, coriander, and chilli (if using), cook for 1 minute. Stir in teriyaki sauce, peanut butter, and water.
  • Lower the heat and cook while stirring frequently for 5 minutes until the mixture is well combined and slightly thickened. Take it off the heat, set it aside, and keep it warm.
  • Preheat a grill or barbecue to high heat. Take the lamb out of the marinade and grill in batches for 2-3 minutes on each side, or until it reaches your desired level of doneness.
  • Serve the lamb on plates with a side of peanut sauce, carrot, celery, and green beans.
