Whip up a quick and flavorful Asian-inspired meal in just 15 minutes!
Ingredients:
  • 8 lamb cutlets
  • 80ml (1/3 cup) Teriyaki Marinade
  • 1 bunch choy sum, stems and leaves separated
  • 27.60 gm vegetable oil
  • 1 bunch broccolini, halved lengthways
  • 2 garlic cloves, crushed
  • 1 tsp grated fresh ginger
  • 40.00 gm water
  • 3 shallots, trimmed, thinly sliced
  • 40.00 ml rice wine vinegar
  • 1 tsp sesame oil
  • Steamed rice, to serve
Instructions:
  • Coat the lamb generously with 2 tablespoons of the flavorful marinade.
  • Halve choy sum stems crosswise and shred the leaves.
  • In a non-stick frying pan over medium-high heat, sizzle 2 teaspoons of vegetable oil. Sear lamb for 2 minutes on each side for a juicy medium finish. Let it rest on a plate covered with foil.
  • Heat the remaining vegetable oil in a wok. Stir-fry choy sum stems, broccolini, garlic, and ginger for 1 minute. Pour in the water and stir-fry for an additional 2 minutes. Add shallot, vinegar, sesame oil, and the rest of the marinade. Toss everything together until heated through. Serve the lamb and greens with steamed rice.
