Tantalizing Asian lamb chops with refreshing watermelon and coriander salad.
Ingredients:
  • 80ml teriyaki marinade
  • 2 garlic cloves, crushed
  • 1/2 tsp Chinese five spice
  • 8 Lamb Loin Chops
  • 21.00 gm soy sauce
  • 12.20 gm fish sauce
  • 20.00 ml white wine vinegar
  • 1 tsp sesame oil
  • 4.00 gm brown sugar
  • 60g pkt Baby Spinach
  • 500g watermelon, peeled, cut into 3cm pieces
  • 250.00 ml coriander leaves
  • 2 spring onions, thinly sliced
  • 1 long red chilli, sliced
Instructions:
  • In a bowl, mix together the teriyaki marinade, garlic, and Chinese five spice. Add the lamb and ensure it is coated thoroughly. Preheat a barbecue grill or chargrill to medium-high heat. Grill the lamb for 4 minutes on each side for medium doneness, or until cooked to your preference. Place the lamb on a plate and cover it with foil. Let it rest for 5 minutes before serving.
  • Whisk together soy sauce, fish sauce, vinegar, oil, and sugar in a small jug.
  • Arrange the spinach and watermelon on serving plates. Drizzle them with the soy sauce mixture. Place the lamb on top and sprinkle with coriander, onion, and chili before serving.
