Delicious grilled salmon tacos with tangy mango-peach salsa, avocado, cabbage, and flavorful special sauce.
Ingredients:
  • 3 mangoes, diced
  • 2 peaches, diced
  • 3 poblano peppers, seeded and diced
  • 0.5 red onion, diced, or more to taste
  • 0.5 lime, juiced, or more to taste
  • 1 bunch cilantro, chopped, divided
  • 1 (8 ounce) container sour cream
  • 3 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 0.125 teaspoon ground cayenne pepper
  • salt and ground black pepper to taste
  • 24 (6 inch) corn tortillas
  • cooking spray
  • 2 pounds fresh salmon
  • 1 small head cabbage, shredded
  • 3 avocados, sliced
  • 2 limes, cut into wedges
Instructions:
  • Mix together ripe mangoes, sweet peaches, spicy poblano peppers, red onion, fresh lime juice, and half of the fragrant cilantro in a spacious bowl to create a flavorful mango salsa. Cover with plastic wrap and chill for a minimum of 1 hour, ideally overnight.
  • Combine sour cream, mayonnaise, ketchup, cayenne pepper, salt, and black pepper in a small bowl to create a flavorful special sauce.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), then lay out those tasty tortillas on a baking sheet.
  • Heat a grill pan over medium-high heat and give it a light coat of cooking spray. Grill the salmon for about 4 minutes on each side until it flakes easily with a fork. Transfer to a plate and flake into smaller pieces using a fork.
  • Warm the tortillas in the preheated oven for approximately 5 minutes until heated through.
  • Place portions of salmon on each tortilla. Add mango salsa, special sauce, shredded cabbage, avocado slices, and the remaining cilantro on top. Roll up the tacos and serve with lime wedges.
