Colorful blackened salmon tacos with mango avocado salsa and fresh lime - a vibrant weeknight main dish.
Ingredients:
  • 3 ripe mangoes - peeled, pitted, and diced
  • 1 avocado - peeled, pitted, and diced
  • 1 orange bell pepper, diced
  • 1 jalapeno pepper, seeded and diced
  • 1 lime, juiced
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon sweet and spicy seafood rub, or to taste
  • 0.5 teaspoon chili powder, or to taste
  • salt and ground black pepper to taste
  • 2 skin-on salmon fillets
  • 2 tablespoons olive oil, or as needed, divided
  • 6 corn tortillas
  • 3 large limes, cut into wedges
Instructions:
  • In a large bowl, mix together mangoes, avocado, orange bell pepper, and jalapeno to create a vibrant salsa. Add lime juice, cilantro, and salt, and gently toss to blend flavors. Refrigerate covered with plastic wrap.
  • Evenly coat one side of each salmon steak with seafood rub, chili powder, salt, and black pepper; gently massage the seasonings in using your fingers.
  • Heat olive oil in a large skillet over medium-high heat. Place salmon skin-side down and cook until skin is crisp, about 4 to 5 minutes. Flip the salmon, remove the skin, and season the top with seafood rub, chili powder, salt, and black pepper. Cook until lightly browned on the second side and salmon flakes easily with a fork, another 4 to 5 minutes.
  • Cut each salmon fillet into 6 long strips.
  • Heat a lightly oiled skillet over medium heat. Pan-fry corn tortillas individually until warm and flexible, about 30 seconds on each side.
  • Lay a piece of salmon on each tortilla, add salsa, and finish by squeezing a lime wedge on top.
