Delicious salmon tacos with corn tortillas, flaky buttered salmon, corn-black bean salsa, and cheese make for a stunning and simple meal.
Ingredients:
  • 4 (3 ounce) fillets salmon fillets, thawed if frozen
  • 2 tablespoons butter, melted
  • 2 tablespoons lemon juice
  • 1 dash Cajun seasoning
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can black beans, drained
  • 1 tomato, diced
  • 0.25 cup diced red onion
  • 0.25 cup chopped fresh cilantro
  • 0.5 cup shredded mild Cheddar cheese
  • 8 corn tortillas, warmed
  • 0.5 cup sour cream
  • 0.5 cup guacamole
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Prepare the salmon: Arrange salmon fillets in a shallow baking dish. Combine melted butter, lemon juice, and Cajun seasoning in a small bowl, then pour over the salmon.
  • Place the salmon in the preheated oven and bake until it flakes easily with a fork, approximately 20 minutes.
  • Prepare the salsa while the salmon bakes by combining corn, black beans, tomato, red onion, and cilantro in a bowl.
  • Flake the cooked salmon with a fork into smaller pieces.
  • Place a generous amount of flaked salmon, salsa, and Cheddar cheese onto warm tortillas. Roll up the tortillas with the delicious filling inside and enjoy with a side of sour cream and guacamole.
