Crispy salmon tacos

Vibrant rainbow salsa with crispy salmon skin is a delightful dish bursting with fresh flavors of juicy tomatoes, mango, avocado, and zesty lime - a quick and nourishing meal that's a feast for the eyes.
Ingredients:
  • 4 small tortillas
  • 2 limes
  • 160 g ripe mixed-colour cherry tomatoes
  • 1 small ripe mango
  • ½ a small ripe avocado
  • 2 spring onions
  • 2 x 130 g salmon fillets skin on, scaled, pin-boned, from sustainable sources
  • 2 heaped teaspoons Cajun seasoning
Instructions:
  • Cut the cherry tomatoes into quarters. Remove the pit, peel, and roughly chop the mango. Slice the avocado thinly after scooping it out. Finely slice the spring onions. Remove the skin from the salmon and crisp both sides in a non-stick frying pan over medium-high heat. Rub Cajun seasoning all over the salmon and fry for 5 minutes until golden brown on all sides. Place the crispy skin on top of the salmon. Toast the tortillas directly over a gas flame or in a hot pan for 15 seconds using tongs. Top the tortillas with mango, avocado, spring onions, flaked salmon, and crispy skin. Quickly toss the cherry tomatoes and lime juice in the pan for 30 seconds and spoon over the tortillas. Serve with lime wedges for squeezing.
