Salmon with coriander and lime salsa verde

Tantalizing lime salmon served with herbed pasta.
Ingredients:
  • 400g spaghetti
  • 80ml olive oil
  • 3 large salmon fillets
  • 1 bunch chives
  • 1 bunch coriander
  • 1 bunch parsley
  • 150g jar capers, drained
  • 2 tsp grated lime rind
  • 80ml lime juice
Instructions:
  • Cook 400g dried spaghetti in boiling water until al dente according to packet instructions. Test the pasta with your teeth for perfect doneness. Drain and return to the pan.
  • Heat 1 tablespoon of olive oil in a non-stick frying pan over medium-high heat. Cook 3 large salmon fillets for 4-5 minutes on each side until fully cooked. Keep warm by transferring the salmon to a plate and covering it with foil.
  • Finely chop a bunch of chives, coriander, and continental parsley. Mix them with 150g drained capers from a jar. Add 2 teaspoons of grated lime rind, 1/3 cup (80ml) fresh lime juice, and 1/3 cup (80ml) olive oil. Season the mixture. Flake the salmon and combine with pasta.
