Salmon cutlets with lime and coriander butter

Quick and easy herb butter salmon is a perfect weeknight dinner. Keto-friendly serving suggestion included.
Ingredients:
  • 100g butter, softened
  • 40.00 ml finely chopped coriander
  • 2 tsp finely grated lime rind
  • 10.60 gm lime juice
  • cracked black pepper
  • 4 salmon cutlets
  • steamed vegetables, to serve
Instructions:
  • In a small bowl, combine butter with coriander, lime rind, lime juice, and cracked black pepper until well mixed. Chill in the refrigerator until needed.
  • In a non-stick frying pan over medium heat, heat a touch of olive oil. Cook 2 salmon cutlets for 2-3 minutes on each side or to your preferred doneness. Transfer to a plate, cover with foil to maintain warmth, and cook the rest of the salmon in the same way.
  • Plate the salmon cutlets, then generously spoon lime and coriander butter over each piece. Add a side of steamed vegetables if desired.
