Salmon Salad with Creamy Dressing

Delicious salmon salad with zesty creamy lemon dressing.
Ingredients:
  • 300g skinless salmon fillets (approx. 2 small pieces)
  • 1 baby cos lettuce, sliced
  • 1 lebanese cucumber, finely sliced
  • 1 bunch asparagus, trimmed and blanched
  • ½ cup cooked quinoa
  • 100mL Pure Cream
  • 18.20 gm extra virgin olive oil
  • 10.60 gm lemon juice
  • 11.80 gm wholegrain mustard
  • ½ tsp honey
  • salt flakes
  • freshly ground black pepper
  • 40g feta, crumbled
  • ½ cup basil leaves
  • extra virgin olive oil, for drizzling
Instructions:
  • Sear salmon fillets in a lightly oiled pan over medium heat until golden on each side and cooked to perfection. Chill until ready to use.
  • Make the dressing by blending all the ingredients until the mixture is smooth and creamy. If you prefer a thinner consistency, simply add a splash of water.
  • Arrange the salad ingredients on a serving platter, then break the salmon into pieces and scatter over the salad. Spoon the dressing over the top and finish with feta, basil, and a drizzle of olive oil.
