Ingredients:
  • 2.50 gm ground cumin
  • 1 tsp finely grated lemon rind
  • 2 x 400g cans cannellini beans, rinsed, drained
  • 21.00 gm fresh lemon juice
  • 250.00 ml fresh continental parsley leaves
  • 1 small red onion, halved, thinly sliced
  • 20.00 ml salted baby capers, rinsed, drained
  • Olive oil spray
  • 4 Salmon Skin off Fillets
  • Steamed green round beans, to serve
Instructions:
  • In a saucepan over medium heat, heat the oil until shimmering. Cook garlic, cumin, and lemon rind, stirring, until fragrant for about 30 seconds. Stir in cannellini beans and lemon juice for 2 minutes. Crush beans slightly with a fork, cover to keep warm, and set aside.
  • Mix the parsley, onion, and capers together in a small bowl.
  • Preheat a large non-stick frying pan over medium-high heat and lightly coat with oil. Sear the salmon for 3-4 minutes on each side until desired doneness.
  • Divide the flavorful bean mixture onto plates, then layer with the succulent salmon and herbaceous parsley mixture. Accompany with fresh green beans to serve.
