Poached salmon in white wine broth, topped with yogurt-dill sauce.
Ingredients:
  • 0.5 cup plain yogurt
  • 0.25 cup Dijon mustard
  • 0.25 cup fresh lemon juice
  • 3 tablespoons chopped fresh dill
  • 1 tablespoon honey
  • 1 pound salmon
  • 1 cup white wine
  • 0.25 cup chopped shallots
Instructions:
  • Prepare the sauce by combining yogurt, mustard, lemon juice, dill, and honey in a small bowl. Chill in the refrigerator until the salmon is done cooking.
  • For the salmon: Cook the salmon in a medium saucepan with wine, enough water to cover the salmon, and shallots. Cover and simmer over medium heat until the fish flakes easily with a fork, about 10 to 12 minutes. Remove from heat and drain liquid.
  • Plate the salmon and shallots, then drizzle with the sauce before serving.
