Ingredients:
  • 125.00 gm dry white wine
  • 2 dried bay leaves
  • 1/2 tsp whole black peppercorns
  • 1 medium lemon, thinly sliced
  • 4 (200g each) salmon fillets, skin on
  • Steamed chat potatoes, to serve
  • Salad leaves, to serve
Instructions:
  • Combine wine, bay leaves, peppercorns, lemon, and 2 liters of cold water in a large, deep frying pan over medium heat. Simmer gently until fragrant.
  • Turn the heat down to low and gently place the salmon into the pan. Let it simmer, covered, for about 10 minutes or until perfectly cooked. Carefully lift the salmon out of the liquid with a spatula.
  • Pair with delicious roasted potatoes and crisp, fresh salad greens.
