Poached salmon with lemon parsley sauce

Delicious poached salmon that is clean and flavorful, perfect for the whole family.
Ingredients:
  • 1 large white onion, thickly sliced
  • 2 dried bay leaves
  • 4 whole black peppercorns
  • 4.80 gm salt
  • 250.00 gm dry white wine
  • 180g salmon
  • 257.50 gm low-fat milk
  • 62.50 ml finely-chopped flat-leaf parsley leaves
  • 31.50 gm lemon juice
  • Steamed broccolini, to serve
  • Steamed chat potatoes, to serve
Instructions:
  • In a large, deep frying pan or saucepan, elegantly mix together onion, bay leaves, peppercorns, salt, wine, and 3 cups of cold water. Let it gently come to a simmer over medium heat. Nestle in the fish (add extra water if needed to submerge fish). Simmer uncovered for 5 minutes until the fish is delicately cooked. Take off the heat, cover the pan, and let the flavors meld.
  • In a saucepan over medium-low heat, gently melt butter. Add flour and stir for 1 minute. Slowly pour in milk, increase heat to medium, and cook while stirring for 3 minutes until the sauce thickens and coats the back of a wooden spoon. Remove from heat and mix in parsley, lemon juice, and season with salt.
  • Plate the fish using a slotted spoon, then generously drizzle with lemon parsley sauce. Sprinkle with pepper and serve alongside broccolini and potatoes.
