Impress your loved one with tender lemon-poached salmon topped with buttery capers. Serve over fettuccine or with steamed veggies and rice.
Ingredients:
  • 0.5 cup water
  • 2 tablespoons lemon juice
  • 0.125 teaspoon chicken bouillon granules
  • 2 (4 ounce) fillets salmon
  • 1 tablespoon butter
  • 2 tablespoons capers
  • ground black pepper to taste
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a medium-sized skillet, bring water and lemon juice to a boil. Stir in chicken bouillon granules. Reduce heat to a simmer and add salmon fillets to the pan. Cover and simmer over low heat for 10 minutes per inch of thickness at the thickest part, or until the fish flakes easily with a fork. Remove the salmon from the pan and keep warm.
  • Simmer the liquid in the skillet until it reduces to about 1/4 cup, then whisk in butter and add capers. Pour the sauce over the fish, season with pepper, and garnish with parsley.
