Greek feta and poached chicken create a heavenly combination.
Ingredients:
  • 3 (about 700g) chicken breast fillets
  • 8 green shallots, ends trimmed, thinly sliced
  • 82.50 ml fresh dill sprigs
  • 200g Greek feta, crumbled
  • 2 x 75g pkts toasted pine nuts
  • 60ml (1/4 cup) extra-virgin olive oil
  • 40.00 ml red wine vinegar
  • 1 cos lettuce, outer leaves removed, cut lengthways into thin wedges
Instructions:
  • In a large frying pan, place the chicken and cover it with boiling water. Let it simmer over medium-high heat for 10 minutes or until cooked through. Drain and set aside to cool slightly for 10 minutes. Use two forks to coarsely shred the chicken.
  • Mix together the chicken, shallot, dill, feta, and pine nuts in a spacious bowl.
  • Combine the oil and vinegar, then season generously with salt and pepper before whisking until well blended.
  • Distribute the lettuce evenly into serving bowls. Spoon the chicken mixture over the lettuce and then generously drizzle the dressing before serving.
