Chicken, cucumber and feta salad

Vibrant salad perfectly pairs with grilled chicken breasts.
Ingredients:
  • 3 Lebanese cucumbers, halved lengthways, sliced crossways
  • 150g marinated green olives
  • 150g marinated feta, drained, oil reserved
  • 40.00 ml chopped fresh dill
  • 42.00 gm fresh lemon juice
  • 5.90 gm wholegrain mustard
  • 4 chicken breast fillets
  • 20.00 ml cracked pepper
Instructions:
  • Mix the cucumber, olives, feta, and dill together.
  • Mix the lemon juice, mustard, and 2 tablespoons of the reserved oil into the cucumber salad.
  • Season the chicken generously with freshly cracked black pepper. Heat some of the reserved oil in a non-stick frying pan over medium-high heat. Cook the chicken for 4-5 minutes on each side for a perfect medium doneness. Serve the chicken alongside the refreshing cucumber salad.
