Whip up delicious tortilla rolls for a perfect picnic.
Ingredients:
  • 70mls (3 1/2 tbsp) olive oil
  • 500g chicken mince
  • 41.60 gm Tabasco Sauce
  • 1 bunch watercress, washed, dried
  • 3 medium ripe tomatoes, finely diced
  • 1 yellow or red capsicum, de-seeded, finely diced
  • 1 medium red onion, finely diced
  • 250g feta, finely diced
  • Salt & ground black pepper, to taste
  • 60mls (1/4 cup) lemon juice
  • 8 Mexican tortillas, halved
Instructions:
  • In a frying pan over medium heat, heat 2 teaspoons of olive oil. Cook the chicken mince in 2 batches with Tabasco Sauce, stirring constantly, for 5 minutes until just cooked. Remove from heat and let it cool.
  • In a large bowl, toss together the cooled chicken, watercress sprigs, tomatoes, capsicum, red onion, feta, salt, and pepper. Drizzle in the remaining 60mls (3 tablespoons) olive oil and lemon juice, then mix well to combine.
  • Spread the salad onto the tortilla halves, tightly roll them up, wrap in brown or non-stick baking paper, and secure with string. Pack in an airtight container for the picnic.
