Skewer, tortilla, meat, salad, wrap, and roll for a flavorful handheld meal.
Ingredients:
  • 60ml (1/4 cup) extra virgin olive oil
  • 1 tsp finely grated lime rind
  • 60ml (1/4 cup) fresh lime juice
  • 1 garlic clove, crushed
  • 1/2 bunch fresh coriander, roots, stems and leaves chopped
  • 5 chicken breast fillets, cut into 3cm pieces
  • 1 lime, cut into 12 thin wedges
  • Mission Wraps, to serve
Instructions:
  • In a spacious glass or ceramic bowl, mix together oil, lime zest, lime juice, garlic, and coriander. Add chicken and toss until well coated. Cover and refrigerate for 2-4 hours for the flavors to meld.
  • Skewer the chicken onto metal skewers.
  • Heat up the barbecue grill on medium-high. Grill the skewers for 2-3 minutes per side, or until fully cooked. Place a lime wedge on the end of each skewer. Serve with wraps.
