Grilled chicken and corn wrap with zesty coriander lime cream.
Ingredients:
  • 7.50 gm smoked paprika
  • 2 garlic cloves, crushed
  • 18.20 gm olive oil
  • 500g Chicken Thigh Fillets
  • 2 corn cobs, husks and silks removed
  • 120g sour cream
  • 40.00 ml coriander, chopped
  • 21.00 gm lime juice
  • 8 White Soft Wraps
  • 1 baby cos lettuce, leaves separated
  • 250g cherry tomatoes, halved
Instructions:
  • In a bowl, mix paprika, garlic, and oil, then season. Add chicken and coat evenly. Heat a barbecue or chargrill plate over medium heat. Grill the chicken, turning occasionally, for 10 mins until browned and charred. Transfer to a plate, cover with foil, and let it rest for 5 mins. Slice the chicken thickly before serving.
  • Grill the corn cobs on the barbecue or chargrill plate, turning occasionally, for about 10 minutes until the kernels are tender.
  • Mix together the sour cream, coriander, and lime juice, then season. Carefully cut the corn kernels off the cob. Lay out the wraps, then add lettuce, chicken, tomato, and corn. Spoon dollops of the sour cream mixture on top. Roll up the wraps and enjoy.
