Simplify with flavorful green chicken enchiladas: Boil, shred chicken, roll in tortillas with cheese, top with green sauce, bake. Deliciously easy!
Ingredients:
  • 1 pound skinless, boneless chicken breast halves
  • 1 (8 ounce) package shredded Monterey Jack cheese
  • 12 (10 inch) flour tortillas
  • 1 (19 ounce) can green enchilada sauce
Instructions:
  • In a pot, submerge the chicken in water and bring to a boil until juices run clear, around 25 minutes. Drain and allow to cool for about 10 minutes. Shred the chicken.
  • Preheat your oven to 350°F (175°C) and lightly grease a medium baking dish.
  • Reserve 1/4 cup of Monterey Jack for sprinkling on top of the enchiladas. Divide the chicken and the rest of the cheese equally among the tortillas. Roll up the tortillas to create enchiladas and place them in the baking dish. Pour enchilada sauce over the top.
  • Bake in the preheated oven for 30 minutes, then sprinkle reserved cheese on top and bake for an additional 5 minutes until melted.
