Poached salmon mixed with quinoa, Swiss chard, and lemon for a light and flavorful meal.
Ingredients:
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked quinoa
  • 2 cups vegetable broth
  • 0.75 pound salmon fillets
  • 1 cup white wine
  • 0.5 cup water, or more as needed to cover
  • 1 tablespoon olive oil
  • 1 bunch Swiss chard, stems and tough ribs removed, leaves cut into 1/2-inch-wide ribbons
  • 2 tablespoons lemon juice
  • salt to taste
  • 1 pinch ground black pepper
Instructions:
  • In a saucepan over medium heat, warm up 2 tablespoons of olive oil. Sauté the onion and 2 cloves of garlic, stirring, until fragrant, for about 2 minutes.
  • Combine the quinoa with the onion mixture, stirring until lightly toasted for approximately 5 minutes.
  • Pour the flavorful vegetable broth into the quinoa mixture and bring it to a delightful boil. Cover the pot and lower the heat to simmer gently until the quinoa becomes perfectly tender, which should take approximately 20 minutes.
  • Heat salmon with a splash of white wine and water in a saucepan over medium heat until salmon is cooked through and flakes easily with a fork, about 10 to 12 minutes. Drain excess liquid.
  • Gently place the salmon on a plate and use a fork to separate the flakes from the meat, disposing of the skin. Set the salmon aside for later use.
  • In a skillet over medium heat, warm 1 tablespoon of olive oil. Saute 2 cloves of garlic, stirring constantly, until fragrant, approximately 1 minute.
  • Combine Swiss chard and fresh lemon juice with sautéed garlic until the Swiss chard starts to wilt, approximately 2 minutes. Remove from heat.
  • Combine the flaked salmon and chard with the cooked quinoa, gently folding everything together. Season with salt and black pepper to taste.
