"Whip up this nutritious one-skillet meal in just 25 minutes for a delicious and satisfying dinner tonight."
Ingredients:
  • 2 tablespoons olive oil
  • 1 salmon fillet (3/4 lb), cut into 4 serving pieces
  • Salt and pepper
  • 1 cup chopped red onion
  • 1 can (15 oz) Progresso™ cannellini beans, drained, rinsed
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
  • 1/4 cup pitted kalamata olives, cut in half
  • 1/2 lemon
Instructions:
  • Heat oil in a large skillet over medium heat. Season salmon with salt and pepper, then place skin side up in the skillet. Cook until golden brown (2-3 minutes), then flip. Sprinkle onion around salmon and cook for another 2-3 minutes, stirring occasionally, until onion is softened.
  • Combine the beans, tomatoes, and olives in a skillet and cook covered for 5 to 10 minutes until the salmon flakes easily with a fork.
  • Divide the flavorful bean mixture onto 4 plates, placing a piece of juicy salmon on top of each. Finish by giving each serving a refreshing squeeze of lemon.
