Teriyaki-lime salmon and noodle dish with crispy cabbage and creamy avocado – a flavorful, family-friendly dinner.
Ingredients:
  • 270g pkt soba noodles
  • 125ml teriyaki marinade
  • 60ml lime juice
  • 3 tsp sesame oil
  • 2 spring onions, thinly sliced
  • 24.00 gm sesame seeds, toasted
  • 4 Skinless Salmon Portions
  • 4 radishes, thinly sliced
  • 4 baby cucumbers, peeled into ribbons
  • 1 ripe avocado, stoned, peeled, thinly sliced
  • 1 large carrot, peeled, cut into long matchsticks
  • 120g cabbage
Instructions:
  • Boil noodles in a large saucepan following package instructions. Once cooked, cool them under cold water and drain thoroughly.
  • In a small jug, mix together the teriyaki marinade, lime juice, oil, and ¼ cup (60ml) water.
  • Combine noodles, three-quarters of the spring onion, and 1½ tablespoons of sesame seeds in a bowl. Pour in ⅔ cup (160ml) of dressing, toss gently to mix well, and season to taste.
  • Spritz the salmon with olive oil spray and season it. Heat a large pan over medium heat, then cook the salmon for 2-3 minutes on each side for a perfect medium or until it reaches your desired level of doneness.
  • Serve the noodle mixture in bowls. Top with radish, cucumber, avocado, carrot, cabbage, and salmon. Drizzle with remaining dressing and sprinkle with remaining spring onion and sesame seeds.
