Delicious salmon and soba noodle salad with fresh greens.
Ingredients:
  • 3 (180g each) salmon fillets, skin removed
  • 200g snow peas, trimmed, sliced diagonally
  • 250g soba noodles (see note)
  • 4 green onions, thinly sliced
  • 60g baby spinach leaves, trimmed
  • 36.80 gm canola oil
  • 30.00 ml rice vinegar
  • 2 tsp sesame oil
  • 5.30 gm salt-reduced soy sauce
Instructions:
  • Preheat the oven to 180°C. Place a large sheet of baking paper on a flat baking tray. Arrange the fillets in the center of the paper, folding to seal them inside, and bake for 5 minutes. Let it rest for 5 minutes before serving.
  • Bring a pot of salted boiling water to the stove. Quickly blanch the snow peas for 1 minute, then transfer to a sieve and rinse under cold water. Gently pat dry and place in a spacious bowl.
  • Bring the water back to a boil, then add the noodles and cook for 4 to 5 minutes until just tender. Drain the noodles, rinse them under warm water, and mix them with the snow peas.
  • Unwrap the paper parcels and gently break apart the salmon into big chunks. Mix the salmon with the noodles, green onions, and spinach. In a jar with a tight lid, shake together canola oil, vinegar, sesame oil, and soy sauce until well combined. Pour the dressing over the salad and toss everything together. Plate and enjoy!
