Try our delicious salmon noodle bowl with snow peas and avocado for a quick and satisfying weeknight meal.
Ingredients:
  • 180g pkt Soba Noodles
  • 150g snow peas, halved diagonally
  • 600g skinless salmon fillets
  • 40g (1/4 cup) mixed sesame seeds or white sesame seeds
  • 8.40 gm coconut oil
  • 1 continental cucumber, halved, deseeded, sliced diagonally
  • 3 green shallots, diagonally sliced
  • 1 large avocado, thinly sliced
  • 42.00 gm fresh lemon juice
  • 20.00 ml rice wine vinegar
  • 20.00 ml tamari
  • 2 tsp finely grated fresh ginger
  • 1 tsp sesame oil
  • 2.50 gm caster sugar
Instructions:
  • Make the dressing by mixing all the ingredients in a bowl and set it aside.
  • Prepare the noodles in a large saucepan of boiling water according to the package instructions, adding the snow peas during the last minute of cooking. Drain and rinse under cold running water.
  • Sprinkle the salmon with seasoning. Spread sesame seeds on a plate and gently press the salmon into the seeds to coat. In a large non-stick frying pan over medium heat, warm the oil. Cook the salmon, flipping occasionally, for 6-7 minutes for medium doneness or to your preference. Place the salmon on a plate, let it rest for 2 minutes, then slice and serve.
  • In a large bowl, combine the noodle mixture, cucumber, and shallot with most of the dressing. Toss gently. Arrange the avocado and salmon on top. Finish with a drizzle of the remaining dressing.
