Broad bean salad with mint and red onion pairs perfectly with fresh salmon.
Ingredients:
  • 600g (4 cups) frozen broad beans
  • 1 small red onion, finely chopped
  • 125.00 ml chopped fresh mint
  • 45.50 gm olive oil
  • 80g (1/2 cup) sesame seeds
  • 1 tsp cracked black pepper
  • 4 (about 125g each) salmon fillets
  • Fresh mint sprigs, to serve
Instructions:
  • Preheat a barbecue flat plate to medium-high heat. Place broad beans in a heatproof bowl and cover with boiling water. Let sit for 5-10 minutes until tender. Drain and peel off the skins. Combine broad beans with onion, mint, and 2 tablespoons of oil in a bowl. Season with salt and pepper, then toss everything together.
  • Combine sesame seeds and pepper in a mortar, season with salt, and crush finely with a pestle. Line a baking tray with non-stick baking paper, then spread the sesame seed mixture on it. Press salmon, flesh-side down, onto the sesame seed mixture to coat evenly.
  • Drizzle the remaining oil on a flat plate. Place the salmon skin-side down and cook for 2-3 minutes until golden. Flip and cook for 2 more minutes for medium doneness or until the fish easily flakes with a fork test.
  • Arrange the broad bean mixture on serving plates, then layer the salmon and garnish with fresh mint.
