Gluten-free sesame crusted salmon with ginger rice noodles - a delightful combo for your taste buds!
Ingredients:
  • 150g dried flat rice stick noodles
  • 4 boneless salmon fillets, skin off
  • 75.00 gm sesame seeds
  • 18.20 gm Brand pure olive oil
  • 1 bunch mint, leaves picked
  • 1 bunch coriander, leaves picked
  • 250.00 ml basil leaves
  • 2 long red chillies, thinly sliced diagonally
  • Lime wedges, to serve
  • 86.63 gm gluten-free soy sauce
  • 40.00 ml white vinegar
  • 10.00 gm Brand caster sugar
  • 1 tsp ginger, grated
  • 1 tsp sesame oil
Instructions:
  • Season the salmon and press gently into sesame seeds. Heat oil in a pan over medium heat and cook the salmon for 2-3 minutes on each side until cooked through.
  • Whisk together soy sauce, vinegar, sugar, ginger, and oil in a bowl until sugar dissolves to make the dressing. Pour half of the dressing over the noodles and add mint, coriander, basil, and chili. Gently toss until everything is mixed.
  • Cook the noodles according to the instructions on the packet. Once cooked, rinse the noodles with cold water, drain them well, and transfer to a large bowl.
  • Pour the remaining dressing over the salmon and plate it with ginger noodles and lime wedges.
